Vegetarian Egg Sambal / Vegetarian Chilli Egg



Ingredients

1. 7-8 Boiled eggs, halved, yolks removed
2. 2 tbsb chilli powder dissolved in enough water to form a very thick paste (think toothpaste)
3. 1 1/2 large onions, finely chopped
4. 4 crushed garlic cloves
5. 2 cm crushed ginger
6. 2 tsp fenugreek seeds
7. 2 tbsb tomato ketchup
8. 2 tsp tomato puree
9. 2 tomatoes, quartered.
10. 5-6 Kaffir lime leaves [fresh or dried] (optional)
11. 1 tbsb sugar
12. 2-4 tsp salt

Method

1. Brown fenugreek seeds, onions, garlic and ginger in oil.
2. Add chilli paste and keep on frying fr 10-15 minutes on low-medium heat. The oil level must be at least 2-3 mm above the concoction in the pan. Keep on stirring until the chilli paste changes colour from bright red to somewhat deeper in colour - like coagulated blood.
3. Add the remaining ingredients. If sambal has a 'raw' taste, add more oil and keep on frying until the 'raw' taste disappears.

Banana and Coffee Breakfast Muffins

There she was, going through her wardrobe trying to find her winter coat. I couldn’t help but to notice an extremely familiar smell.Fruity.Rotting.Abused bananas! She literally stores her bananas in her cupboard! It was more of a mini plantation than anything else. This recipe is especially for those who have bananas which we medical students like to refer to as ‘gangrenous’ – bananas that plead to be put out of their misery.



Ingredients
preheat oven to 170 degrees Celsius

A
1.85 mls of vegetable oil / olive oil
2. 4 ripe bananas, smashed (use gangrenous bananas [over-riped ones])
3.3/4 cup sugar ( preferably brown sugar)
4.1 beaten egg
5.1 tsp vanilla extract
6.1 tsp coffee essence (optional)
7.1 cup chopped pecans / walnuts (optional)
8.1 1/2 tbsb of strong coffee

B
1. 1 1/2 cups of flour
2.1 tsp of baking soda
3.a pinch of salt.

Method

1. Mix (A) in a large bowl with a blender.
2. Add sieved (B) into the mix.
3. Mix well. (DO NOT USE A BLENDER to incorporate (B) into the wet mixture.Use a wooden spoon)
4. Pour mixture into muffin tin. (makes 12 standard size muffins)
5. Bake at 170 degrees Celsius for 30-40 minutes.

*Use a thin skewer to check whether the muffin is done. If the skewer comes clean from within the muffin, means it's done.

Info

Instead of using butter, I used oil to reduce the calorie rating of the muffins. These muffins make great breakfast addition- coffee and banana, a great way to add to your 5-a-day. Spread muffins with Extra Light Flora for the added sinfulness!

Homemade Fish Burger

*patty on wholemeal bread

Ingredients

1 kg white fish meat. Frozen fish is cheaper, eg.pollock.
1-2 tbsb parsley (fresh or dried)
1 tsp garlic powder/ chopped garlic [optional]
2 tsp paprika [optional]
2 tsp pepper
1 tsp salt
2 tbsb flour
1 whole egg
2 tbsb LOW FAT mayonnaise
1 tbsb lemon juice [optional]
breadcrumbs [alternative : corn flour/ rice flour] as desired

Method

1.Microwave the fish until its done ; 6-8 minutes on high heat. Remember to defrost first.
2.Blend together fish with the other ingredients except the breadcrumbs.
3.Freeze mixture for 2-3 hours
4.Shape into 11-12 patties. [patties can be frozen at this point for future use]
5.Coat patties with breadcrumbs
6.Pan-fry patties in olive oil.

This recipe has a low calorie rating, approximately 150 calories per patty with virtually no saturated fat. Predominant nutrient is protein. For a healthier option try adding a cup of finely grated carrots into the mixture. The cheapest place to get your frozen fish in the UK is LIDL. (1 kg of frozen pollock is about 2-2.99 pounds)
